Back to school time can be hectic when you get home from work. Kids working on homework and asking what’s for dinner. These 5 go to freezer meals can be either popped in the oven and left alone as soon as you get home, or thrown in the slow cooker before you leave for work in the morning.

Chicken Broccoli Rice Casserole Freezer Meal

Chicken Broccoli Rice Casserole Freezer Meal

Ingredients:

  • 10 cups cooked rice (White or Brown)
  • 4 cups cooked chicken, chopped
  • 4 cups chopped broccoli, lightly steamed (Fresh or Frozen)
  • 2 cans Cream of Mushroom Soup
  • 2 cans Cream of Chicken Soup
  • 4 cups shredded Cheddar cheese
  • salt and pepper to taste

Directions are very simple: Combine all ingredients in a large bowl and mix well.

To Freeze: Divide into 4 one gallon zipper top freezer bags and seal tightly. Freeze them flat for easier storage in the freezer.

To Serve: Thaw this freezer meal overnight (or about 8 hours) in the refrigerator. Dump bag into a greased casserole dish (each bag will fill an 8×8 pan; 2 bags fit in a 9×13 pan). Sprinkle with additional cheese or bread crumbs if desired. Bake at 350°F for 25-30 minutes or until heated through and bubbly.

Lemon Pepper Slow Cooker Chicken Freezer Meal

Lemon Pepper Chicken Freezer Meal

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, fat trimmed
  • ¼ cup extra virgin olive oil
  • Juice of 1 Lemon (~3 tablespoons)
  • ½ tsp freshly cracked black pepper
  • ¼ tsp salt

To Freeze: Add all ingredients to labeled freezer bag. Remove as much air as possible and freeze flat.

To Serve: Thaw this freezer meal overnight in the refrigerator. Dump all ingredients into slow cooker and cook on “low” setting for 4-6 hours, or until chicken is cooked through. Serve over rice or noodles.

Cilantro Lime Chicken Slow Cooker Freezer Meal

Cilantro Lime Chicken Tacos Freezer Meal

Ingredients:

  • 3 boneless, skinless chicken breasts
  • juice from 2 limes
  • 1 bunch of cilantro, chopped
  • 1 bag of corn (16 oz)
  • 2 garlic cloves, minced
  • ½ of a red onion, chopped
  • 1 can black beans, drained & rinsed
  • 1 tsp. cumin
  • salt and pepper to taste

To Freeze: Add all ingredients to labeled freezer bag. Take out as much air as possible and freeze flat.

To Serve: Thaw this freezer meal overnight in the refrigerator. Dump all ingredients into slow cooker and cook on low for 8 hours. When done, shred meat and serve on tortillas.

Chicken Broccoli Alfredo Slow Cooker Freezer Meal

Chicken Broccoli Alfredo Freezer Meal

Ingredients:

  • 3 boneless, skinless chicken breasts cut into strips
  • 1 16oz. bag of frozen broccoli
  • 1 large green pepper, chopped (optional)
  • 2 16oz. jars alfredo sauce

To Freeze: Add all ingredients into a 1 gallon labeled freezer bag. Remove as much air as possible and freeze flat.

To Serve: Thaw this freezer meal overnight in refrigerator. Add contents of bag into slow cooker and cook on low for 4-6 hours. Serve over noodles.

Slow Cooker Turkey Chili Freezer Meal

Turkey Chili Freezer Meal

Ingredients:

  • 1½ cups cooked ground turkey
  • 10oz corn, frozen
  • 1 cup diced onion
  • 28oz diced canned tomatoes
  • 16oz tomato sauce
  • 4½oz canned diced green chilies
  • 15oz canned kidney beans
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 1½ tsp red pepper flakes

To Freeze: Mix everything in a large bowl and then divide into 2 one gallon freezer bags. Freeze flat after removing as much air out of bags as possible.

To Serve: Thaw this freezer meal over night in the refrigerator. Add ingredients into slow cooker and cook on low for 4-6 hours.
