I’ve gotten tired of trying to figure out what to take for lunch each day to work. This past Sunday I figured I would pull out the slow cooker, and whip up some no fuss chicken tacos that I can eat on my lunches throughout the week.Slow Cooker Chicken Tacos

I love using my slow cooker! It allows me to do everything else I had planned for the day while also making a great meal. It is great to throw something in before heading off to work. Then to be able to come home to an amazing smelling house, and a fabulous meal.

I could eat tacos every day. They are super easy, and can fill you up as well. These slow cooker, chicken tacos are something new that I tried, and will have to make them again because they were so good.

No Fuss Slow Cooker Chicken Tacos

Ingredients

  • 1 packet taco seasoning
  • 2-3 large boneless, skinless chicken breasts
  • 1 bell pepper (I used orange, can also add more if you want)
  • 1-16oz bag of frozen corn
  • ½ a jar of your favorite salsa
  • Salt & Pepper to taste
  • 1 Jalapeño, chopped (optional item)
  • 1 can black beans (optional)

Directions

Lay the chicken in the bottom of the slow cooker (can be frozen; mine was). Sprinkle packet of taco seasoning over the top of chicken. Next chop up your bell pepper and add to slow cooker. After this add your chopped Jalapeño and finally the bag of frozen corn. The very last thing before turning on the slow cooker is to add your half jar of salsa over the top of everything. You will cook on low for 8 hours.

When it is done you will need to pull the chicken out and shred it with a fork. The chicken comes out of the slow cooker so tender that it just falls apart. You may need to shred in chunks like I did for this very reason. I couldn’t get a whole piece of chicken to come out because it had gotten so tender.

After shredding the chicken I scooped out the corn, peppers, and salsa to mix into the chicken. The smell was amazing and I was looking forward to lunch for the whole week. I didn’t want to separate it into different containers for each day. I just kept it all in one bowl that help myself to each day for lunch, and pulled out what I needed and then re-heated it at that point. Served with a little cheese and lettuce on warm flour tortillas with a splash of salsa verde over top was delicious!

Take advantage of your slow cooker on Sunday and use it to make lunch for the week. It is an easy way to prepare something healthy and enjoyable.
